Cauliflower soup

  • 1 bunch green onions or 1 chopped onion
  • 3 Tbsp butter
  • 4 Tbsp Flour
  • 4 cups milk (1½ evaporated milk/water)
  • Salt to taste
  • Slivered/blanched almonds
  • 1 head cauliflower, chopped
  • 1½ cups cheddar cheese

Sauté onion in butter. Remove from heat. Stir in flour. Gradually add milk. Heat, stirring, until thickened. Add cauliflower (low heat). Simmer ’til tender (10–15 minutes). Add cheese (mom never does).
