  • 4 cups cottage cheese, or one large container
  • 4 eggs, beaten
  • 5 cups Rice Krispies
  • 1 onion, chopped
  • ½ cup chopped almonds
  • 3 pkg George Washington Broth
  • ½ cup butter
  • ¼ cup milk

Mix together, bake 350° F for 60 minutes.

Dave’s favorite and Karen discovered this recipe in Hawaii as we had so many bananas come ripe at once.

  • 1 ¼ cups white sugar
  • 2 tsp. baking powder
  • ⅔ cup shortening
  • ¼ tsp. soda
  • 1 tsp. vanilla
  • ½ tsp. salt
  • 2 eggs, unbeaten
  • ¼ cup sugar
  • 1 cup mashed bananas (~3 or 4)
  • ½ tsp. cinnamon
  • 2 ¼ cups white flour       

Cream sugar, shortening, and vanilla until light and fluffy. Add eggs and beat well. Stir in mashed bananas. Sift flour with baking powder, soda, and salt. Add and mix well. Chill for 30 minutes. Drop by spoonfuls 2 inches apart on greased baking sheets. Mix sugar and cinnamon. Sprinkle over cookies. Bake at 400° F for 8 to 10 minutes, or until lightly browned. Makes about 5 dozen.

We got this recipe from a good friend in Hawaii, Stephanie Arthur. The red dot in the center of the cookie gives it the Oriental flare.

Sweet & Sour Meatballs

Sweet & Sour Meatballs

Meatballs

  • 2 ½ cups Ritz cracker crumbs ( 3 PKG)
  • 1 ½ cups walnuts, ground
  • 1 tsp. salt
  • 1 finely chopped onion
  • 1 Tbsp. sage
  • 1 ½ cups grated cheese
  • 3 pressed garlic cloves
  • 1/3 cup minced parsley
  • 8 eggs

Form into balls and place in 9×13 inch pan.

Sauce

  • ½ cup oil
  • ½ cup lemon juice
  • 1 ½ cup apricot jam
  • 1 cup ketchup
  • 4 Tbsp. sugar
  • 4 Tbsp. grated onion
  • 1 tsp. salt
  • 1 tsp. oregano

Heat sauce until melted and mixed together. Pour over meatballs. Bake at 375° F for 30 minutes.
