  • 1 24 oz. can chili beans
  • 1 ½ cups grated cheddar cheese
  • 1 bag taco flavor tortilla chips, broken
  • 1 can olives (whole), pitted and drained
  • 1 can (16 oz.) stewed tomatoes, chopped

Mix ingredients and bake at 375° F with cheese on top until all is hot and cheese is melted. You can also add frozen corn and black beans.

Karen Vixie’s Vegan Waffles

  • 1 ½ cups whole wheat flour
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 2 ¼ cups soy milk
  • ¼ cup canola oil
  • 3 tablespoons brown sugar

Sift or whisk together the flour, baking powder, baking soda, and salt in a large bowl. Mix the soy milk, canola oil, and brown sugar in a medium bowl. Pour the soy milk mixture into the flour mixture and stir just until blended. Cook on a waffle iron for three to five minutes, generously spraying both grills with oil before each waffle (some people say not to spray as it builds up).

Meatballs 2 ½ cups Ritz cracker crumbs ( 3 PKG) 1 ½ cups walnuts, ground 1 tsp. salt 1 finely chopped onion 1 Tbsp. sage 1 ½ cups grated cheese 3 pressed garlic cloves 1/3 cup minced parsley 8 eggs Form into balls and place

  • 1 roll of chicken soy meat
  • ½ cup dried bread crumbs
  • 7 oz. Tartex
  • 6 Tbsp. potato flour
  • 1 onion, chopped
  • ½ cup celery (~2 stalks)
  • ½ cup mayonnaise
  • 2 eggs
  • 1 Tbsp. lemon juice

Put in blender and blend. Bake at 375° F for 45 minutes. Serve with tartar sauce.

Everyone loves these and will eat the whole batch in one sitting if we don’t make sure we have other things that they love to eat (and which will fill them up). So we usually have mashed potatoes, salad and bread.
